Without quite realizing it, we've been making Dolce Duo's snow mochi every single day for months now — and there's one thing we only learned by doing it: the hardest part of snow mochi isn't making it taste good. It's making it still taste good the next day.
Many of you have probably experienced this — you buy mochi, put it in the fridge, and by the next day the skin has gone hard and starchy. That's actually starch retrogradation, not staleness. For months we kept adjusting the recipe — the flour ratio in the skin, how the cream is whipped and stabilized — failing more times than we can count. We got so sick of eating our own failed test batches haha! Only now that we've reached a quality we can keep consistent every day did we feel ready to bring it here and share it with you.
One more thing we hold onto: every piece of feedback a customer gives us, we discuss it that same day, and if it's reasonable and fixable, we change it immediately. Someone said it was too sweet — we adjusted the next batch. Someone said the cream collapses if it sits too long — we went back and reworked how we whip it. What I've learned: there's no shortcut in food. You just keep refining until you land on the best version, just like how life keeps refining us until we land on the best version of ourselves.
